Zillertaler Speck (Zillertal bacon)
In Zillertal, Speck is still made in the traditional way, involving a great deal of manual work and using only choice pork. First, the meat is dry-salted by hand using a process known as dry curing. It is then manually rearranged several times. Next, the meat is seasoned using nothing more than rough-grained salt and a variety of natural spices before being placed in the smoking chamber, which is fired with wood from local saw mills. Smoked with a secret blend and air-dried in the fragrant air of the Zillertal, the Speck takes on its unique taste.

Zillertaler Heumilch (Zillertal hay milk)
It’s with good reason that hay milk is said to be the purest form of milk: it’s produced using the oldest milk production technique. Consistent grass-based dairy farming guarantees milk from cows that are fed solely on fresh alpine grass, herbs and flowers in summer and on hay and crushed grain in winter. Grass-based dairy farming positively affects the environment as the mowing and grazing fosters the rich biodiversity of on average 30-50 different grasses and herbs – and that’s something that not only our cows can taste.

Zillertal beer
The amber nectar has been brewed in Zell am Ziller since right back in 1500, initially by imperial order. Today, over 500 years later, the Zillertal brewery enjoys an excellent reputation and produces the highest quality products. Enjoyment of the various different speciality beers is at the heart of the Zillertal beer culture.

Wine from Zillertal
Can you even grow wine in Zillertal? Despite other people’s doubts, Maria Pfister believed so, put it to the test and is now Zillertal’s only vintner – with her own wine tavern. She presses Chardonnay and Zweigelt grapes in Zillertal’s only vineyard.

Doggl making
The Doggl is a traditional type of Zillertal footwear. The natural product made from wool has proven its worth over several centuries – not just in warm homes but also outdoors and even for tobogganing. The milled, loden shoe is weatherproof and available in a special outdoor version with a rubber sole. Even today, Doggls are completely cut by hand and remain an original traditional product from Zillertal.

Quill embroidery
The people of the Alps love their lederhosen and cummerbunds. The classic garments are particularly worn during festivals and celebrations – and anyone who looks closely will spot the hidden artwork. In Austria, there are still four or five handicraft businesses which specialise in quill embroidery, one of which is owned by Alexander Stiegler and located in Stumm in Zillertal.
Zillertal folk costume
In other areas of the Alps, every village has its own folk costume. Not in Zillertal. Here, everyone in the valley wears the same “uniform”. The main part of the Zillertal folk costume is the famous “Zillertaler Tuxer” or woollen jacket. Original Zillertaler Tuxer are made from grey loden wool and have black velvet embroidery and a woollen border, green piping and, as a special feature, a light-blue lining made from mattress cover material.

Zillertaler Edelbrand (Zillertal fine brandy)
The journey from the fruit to the finished product requires a great deal of traditional expertise and high levels of professionalism. In Austria, “fine brandy” means spirits produced from fermented fruit containing sugar. The fruits’ taste is preserved during distillation. What customers commonly refer to as "schnapps", the distiller sells as "...brand". Schnapps is part of everyday culture in Zillertal and visitors are often given a shot of this as a friendly gesture.

Zillertal honey
The Zillertal offers flower meadows in abundance for all beehives of the Zillertal beekeepers. Agriculture close to nature and the love of beekeepers make bee life a real honey lick. In spring, the school project "Blooming Community" contributes to a vital source of food for the individual bee colonies and thus creates the basis for high-quality honey.
Carvings for all eternity
Deer antlers turn into beautiful little pieces of art. In the past, lumberjacks earned extra money after a hard day‘s work in the forest by carving edelweiss flowers. For Rauch, this delicate craft is a hobby, too – but one with very special meaning: for him, carving represents a wonderful combination of tradition and a love of nature. In order to carve a copy of an edelweiss flower – a rare composite flower in the Alps these days – the carver only uses the white, inner part of the deer antlers. The “burr” – the lower part of the antlers – is used to produce belt buckles, glass decorations and key chains.
