Ingredients for the caramelised honey:
200 g honey
Peel of 1 citrus fruit
to taste (grapefruit, mandarin, orange etc.)
100 ml hot water
Ingredients for one cocktail:
2 twigs of rosemary
4 cl Havana Club
(7 years)
2 cl (freshly squeezed!) lime juice
2 cl caramelised honey (4 tsp.)
1 cl tawny port
Ice cubes

Preparation:
1. We start with the honey. Mix honey with citrus peel and allow to caramelise in a pan at moderate heat until honey turns slightly brown and bubbles form on the surface. Allow to cool slightly, then add 100 ml hot water and stir thoroughly.
2. For the cocktail, slightly crush one rosemary twig in mortar. Place rosemary with other ingredients, four tsp. caramelised honey and one handful crushed ice in a cocktail shaker and shake vigorously until shaker surface fogs. Fill a tumbler with ice cubes and filter cocktail from the shaker into the glass. Decorate with a fresh twig of rosemary – and there’s your Ziller chiller!
