Jam fritters


Ingredients - dough:

400 g flour
 Salt
 100 g butter
 1 egg yolk
 188 ml milk and water
 1 tbsp rum 
 Clarified butter/oil for frying 
 Icing sugar

 

Ingredients - filling: 

Plum jam
 Plum puree
 or favourite filling

Preparation:

1. Add butter to the salted flour and mix with the yolk, milky water and rum to a smooth and supple dough.

2. Cover and leave to rest. 

3. Roll out the dough very thinly in portions, cut out circles, and add a small amount of the filling. Fold firmly into a half moon shape.

4. Place the fritters with the thick side down in the hot fat (drizzle with fat), then turn and finish frying. 

5. Allow to drain on kitchen paper and sprinkle with icing sugar.
